- 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
- 1 tsp garlic powder
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 cups broccoli florets
- 2 cups milk (whole or 2%)
- 1 cup chicken broth
- 1 tbsp all-purpose flour
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp Dijon mustard (optional, for depth of flavor)
- 1/4 tsp red pepper flakes (optional, for a little heat)
Instructions
- Cook the Pasta & Broccoli:
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions, adding broccoli during the last 2 minutes of cooking.
- Drain and set aside.
- Cook the Chicken:
- In a large skillet, melt butter over medium-high heat.
- Add chicken, garlic powder, salt, pepper, and paprika.
- Cook for 5-6 minutes, stirring occasionally, until chicken is golden brown and cooked through.
- Make the Cheesy Sauce:
- Reduce heat to medium and sprinkle flour over the chicken. Stir to coat.
- Gradually pour in milk and chicken broth, stirring constantly.
- Simmer for 2-3 minutes until slightly thickened.
- Add the Cheese:
- Stir in cheddar cheese, Parmesan, and Dijon mustard until melted and smooth.
- Add red pepper flakes if using.
- Combine Everything:
- Add the cooked pasta and broccoli to the skillet, tossing to coat in the creamy sauce.
- Simmer for 1-2 minutes until everything is heated through.
- Serve & Enjoy:
- Garnish with extra cheese or fresh parsley, if desired.
