Ingredients
Scale
For the Pasta and Broccoli:
- 16 ounces pipe rigate pasta (or your favorite pasta)
- 2 cups broccoli florets
For the Chicken and Sauce:
- 2 chicken breasts, boneless, skinless
- 2 tablespoons butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 1/2 cups milk
- 2 cups vegetable broth
- 1/4 cup all-purpose flour
- 1 teaspoon Slap Ya Mama® seasoning
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 2 cups sharp cheddar cheese
- 3-ounce bag sun-dried tomatoes, coarsely chopped
Instructions
1. Cook the Pasta and Broccoli
- In a large pot, cook pasta according to package instructions until al dente.
- Add broccoli florets to the boiling pasta during the last 3 minutes of cooking.
- Drain the pasta and broccoli, then return them to the pot. Stir in the chopped sun-dried tomatoes.
2. Cook the Chicken and Aromatics
- In a large skillet over medium heat, melt the butter.
- Add the chicken, onions, garlic, and seasonings (Slap Ya Mama®, black pepper, garlic powder, smoked paprika, and red pepper flakes).
- Cook until the chicken is fully cooked and the onions are tender, about 6-8 minutes.
3. Prepare the Sauce
- Sprinkle flour over the chicken mixture and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the milk and vegetable broth, stirring constantly.
- Bring the mixture to a gentle boil and cook until the sauce thickens slightly.
4. Add Cheese and Combine
- Reduce heat to low and stir in the cheddar cheese until melted and smooth.
- Pour the sauce over the pasta and broccoli in the pot. Toss gently to combine, ensuring everything is evenly coated.
5. Serve and Enjoy
- Serve warm, optionally with a side salad or crusty garlic bread.
Notes
- Substitute chicken thighs for chicken breasts for a juicier option.
- Add extra vegetables like bell peppers or mushrooms for variety.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if needed.
