Description

This Chicken and Broccoli Pasta is a creamy and cheesy delight that’s perfect for family dinners. Packed with tender chicken, fresh broccoli, and a flavorful sauce, it’s a comforting meal everyone will love!

Ingredients

Scale

For the Pasta and Broccoli:

  • 16 ounces pipe rigate pasta (or your favorite pasta)
  • 2 cups broccoli florets

For the Chicken and Sauce:

  • 2 chicken breasts, boneless, skinless
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 1/2 cups milk
  • 2 cups vegetable broth
  • 1/4 cup all-purpose flour
  • 1 teaspoon Slap Ya Mama® seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 2 cups sharp cheddar cheese
  • 3-ounce bag sun-dried tomatoes, coarsely chopped

Instructions

1. Cook the Pasta and Broccoli

  1. In a large pot, cook pasta according to package instructions until al dente.
  2. Add broccoli florets to the boiling pasta during the last 3 minutes of cooking.
  3. Drain the pasta and broccoli, then return them to the pot. Stir in the chopped sun-dried tomatoes.

2. Cook the Chicken and Aromatics

  1. In a large skillet over medium heat, melt the butter.
  2. Add the chicken, onions, garlic, and seasonings (Slap Ya Mama®, black pepper, garlic powder, smoked paprika, and red pepper flakes).
  3. Cook until the chicken is fully cooked and the onions are tender, about 6-8 minutes.

3. Prepare the Sauce

  1. Sprinkle flour over the chicken mixture and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
  2. Slowly pour in the milk and vegetable broth, stirring constantly.
  3. Bring the mixture to a gentle boil and cook until the sauce thickens slightly.

4. Add Cheese and Combine

  1. Reduce heat to low and stir in the cheddar cheese until melted and smooth.
  2. Pour the sauce over the pasta and broccoli in the pot. Toss gently to combine, ensuring everything is evenly coated.

5. Serve and Enjoy

  1. Serve warm, optionally with a side salad or crusty garlic bread.

Notes

  • Substitute chicken thighs for chicken breasts for a juicier option.
  • Add extra vegetables like bell peppers or mushrooms for variety.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if needed.
