Description

Cheesy Cauliflower Breadsticks are a delicious low-carb, gluten-free twist on classic cheesy breadsticks. Made with cauliflower instead of flour, these savory sticks have crispy edges, a soft cheesy center, and are perfect as a healthy appetizer, snack, or side dish. Packed with mozzarella, Parmesan, and cheddar, they’re a hit for keto and gluten-free diets.


Ingredients

  • 1 small head of cauliflower (about 3 cups grated)

  • 1 large egg

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp dried oregano

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup shredded cheddar cheese (for topping)

  • Optional: red pepper flakes, chopped parsley


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Grate the cauliflower using a box grater or food processor until it resembles rice.

  3. Microwave the grated cauliflower for 4–5 minutes, then let it cool slightly.

  4. Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.

  5. In a large mixing bowl, combine cauliflower, egg, mozzarella, Parmesan, garlic powder, oregano, salt, and pepper. Mix until a dough forms.

  6. Press the dough onto the baking sheet into a rectangle about 1/4-inch thick.

  7. Bake for 20–22 minutes or until golden and firm.

  8. Remove from oven, sprinkle shredded cheddar on top, and bake an additional 5–7 minutes until cheese is bubbly and lightly browned.

  9. Let cool slightly, slice into breadsticks, and garnish with parsley or red pepper flakes if desired.

  10. Serve warm with marinara or your favorite dip.

Notes

  • For a crispier texture, broil for 1–2 minutes at the end.

  • You can substitute different cheeses based on preference.
