These Cheesy Beef Enchiladas are a delicious, family-friendly Tex-Mex favorite, perfect for busy weeknights or casual gatherings. Made with seasoned ground beef, soft tortillas, rich enchilada sauce, and gooey melted cheese, this budget-friendly comfort food is easy to prepare and full of bold flavors.

Ingredients

Units Scale
  • 1 lb ground beef
  • 6 large tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the beef & onions: In a skillet over medium heat, cook ground beef with diced onions until browned. Drain excess grease.
  • Season the filling: Stir in cumin, chili powder, garlic powder, salt, and pepper. Mix well.
  • Assemble the enchiladas: Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  • Add sauce & cheese: Pour enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheddar cheese.
  • Bake: Place in the oven and bake for 20 minutes, until the cheese is melted and bubbly.
  • Serve hot with your favorite toppings like sour cream, chopped cilantro, or avocado.

Notes

  • Swap ground beef for ground turkey or black beans for a lighter version.
  • Use whole wheat or low-carb tortillas for a healthier twist.
  • Add green chilies or jalapeños for extra spice.
  • Store leftovers in an airtight container for up to 3 days or freeze for a quick meal later.
