- 12 large cremini or white mushrooms, stems removed
- 1 tablespoon butter, melted
- 1/2 cup sharp Irish cheddar cheese, shredded
- 1/4 cup cream cheese, softened
- 1/4 cup breadcrumbs
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions

Preheat & Prep:
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking sheet or line it with parchment paper.

Prepare the Filling:
- In a medium bowl, mix together the shredded Irish cheddar, cream cheese, breadcrumbs, garlic, Dijon mustard, salt, and black pepper until well combined.

- Brush the tops lightly with melted butter.
