Description

  • 12 large cremini or white mushrooms, stems removed
  • 1 tablespoon butter, melted
  • 1/2 cup sharp Irish cheddar cheese, shredded
  • 1/4 cup cream cheese, softened
  • 1/4 cup breadcrumbs
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat & Prep:

    • Preheat the oven to 375°F (190°C).
    • Lightly grease a baking sheet or line it with parchment paper.
  2. Prepare the Filling:

    • In a medium bowl, mix together the shredded Irish cheddar, cream cheese, breadcrumbs, garlic, Dijon mustard, salt, and black pepper until well combined.
  3. Stuff the Mushrooms:

    • Spoon the cheese mixture into each mushroom cap, pressing gently to pack the filling.
  4. Bake:

    • Arrange the stuffed mushrooms on the prepared baking sheet.
    • Brush the tops lightly with melted butter.
    • Bake for 18-20 minutes, until golden brown and bubbly.
