Description

For the Cereal Milk Custard:

  • 2 cups whole milk
  • 1 cup sweet cereal (like Lucky Charms or Fruity Pebbles)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup colorful cereal marshmallows
  • Rainbow sprinkles

Instructions

  1. Make the Tart Crust:

    • In a food processor, pulse flour, powdered sugar, and salt until combined.
    • Add cold butter and pulse until the mixture resembles coarse crumbs.
    • Mix in the egg yolk, vanilla, and ice water (1 tablespoon at a time) until the dough comes together.
  2. Chill & Bake:

    • Shape the dough into a disk, wrap it in plastic, and chill for 30 minutes.
    • Roll out and press into mini tartlet pans.
    • Bake at 350°F (175°C) for 12-15 minutes, or until golden brown. Let cool completely.
  3. Prepare the Cereal Milk:

    • In a bowl, soak the cereal in milk for 20 minutes.
    • Strain the milk, discarding the cereal.
  4. Make the Custard:

    • In a saucepan, whisk together sugar, cornstarch, and egg yolks.
    • Gradually whisk in the cereal-infused milk.
    • Cook over medium heat, stirring constantly, until thickened (about 5 minutes).
    • Remove from heat and stir in vanilla extract and butter. Let cool slightly.
  5. Assemble the Tartlets:

    • Pour the custard into the cooled tart shells.
    • Refrigerate for at least 2 hours to set.
  6. Decorate & Serve:

    • Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
    • Pipe onto the tartlets and top with cereal marshmallows and sprinkles.
