Description

This Cashew Chicken Salad combines tender rotisserie chicken, crunchy cashews, sweet red grapes, and crisp Napa cabbage in a creamy honey-mayo dressing. A perfect balance of sweetness, nuttiness, and crunch, it’s ideal for gatherings, meal prep, or a light lunch.

Ingredients

Units Scale

For the Salad

  • 2 cups rotisserie chicken, shredded
  • 1 cup red seedless grapes, halved
  • 1 cup Napa cabbage, thinly sliced
  • 1/4 cup celery, diced
  • 1/4 cup green onion, thinly sliced
  • 1/2 cup cashews

For the Dressing

  • 1/2 cup mayonnaise
  • 1 tbsp honey
  • 1/2 tsp garlic powder

Instructions

  1. Prepare the Salad Ingredients:
    • In a large mixing bowl, combine shredded chicken, grapes, Napa cabbage, celery, green onion, and cashews.
  2. Make the Dressing:
    • In a small bowl, whisk together mayonnaise, honey, and garlic powder until smooth.
  3. Combine and Serve:
    • Pour the dressing over the salad ingredients and toss until evenly coated.
    • Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.

Notes

  • Variations: Add dried cranberries or apple slices for extra sweetness, or substitute Greek yogurt for mayonnaise for a lighter dressing.
  • Make It Ahead: Store the salad and dressing separately in the refrigerator for up to 2 days. Toss together just before serving.
  • Serving Ideas: Serve on its own, in a sandwich, or wrapped in lettuce leaves for a low-carb option.
