Description

Thick slices of red cabbage roasted to perfection, caramelized on the edges, and drizzled with a flavorful balsamic glaze. A simple yet elegant side dish packed with deep, savory flavors.

Ingredients

Scale
  • 1 large red cabbage
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon honey or maple syrup (optional)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the cabbage: Slice the red cabbage into thick steaks, about ¾-inch thick, and arrange them on the baking sheet.
  3. Make the marinade: In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, pepper, smoked paprika, and oregano.
  4. Coat the cabbage: Brush the mixture generously over both sides of each cabbage steak.
  5. Roast for 25-30 minutes, flipping halfway through, until the edges are crisp and caramelized.
  6. Drizzle & serve: Drizzle with a touch of honey or maple syrup for extra depth of flavor. Garnish with red pepper flakes and serve warm!

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Pairs well with roasted meats or as a topping for grain bowls.
  • Store leftovers in an airtight container and reheat in the oven for best texture.
