Description

A hearty and flavorful Romanian dish featuring slow-cooked cabbage caramelized with tomatoes, onions, and smoky sausage. Perfect for a comforting meal with deep, rustic flavors.

Ingredients

Units Scale
  • 1 medium head of cabbage, thinly sliced
  • 3 smoked sausages (or your choice of sausage)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced (or 1/2 cup canned tomatoes)
  • 1/4 cup vegetable oil
  • 1 teaspoon paprika
  • 1/2 teaspoon caraway seeds (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken or vegetable broth

Instructions

  • Preheat the oven to 375°F (190°C).
  • Sauté the onions: Heat oil in a large pan over medium heat. Add the onions and cook until soft and golden.
  • Add aromatics: Stir in garlic, paprika, caraway seeds, salt, pepper, and red pepper flakes. Cook for 1 minute until fragrant.
  • Cook the cabbage: Add the sliced cabbage and stir well, cooking for 10 minutes until slightly softened.
  • Simmer: Stir in diced tomatoes and broth. Mix well and let simmer for another 5 minutes.
  • Bake: Transfer cabbage to a baking dish, nestle the sausages on top, and bake for 40-45 minutes until the cabbage is caramelized and the sausages are browned.
  • Serve: Let rest for a few minutes before serving. Enjoy warm!

Notes

  • For extra richness, drizzle with a little melted butter before serving.
  • Smoked sausages like kielbasa or Romanian cabanos work best for deep, smoky flavor.
  • Serve with crusty bread or polenta for a complete meal.
