Description

A bold and flavorful Mediterranean seafood dish featuring tender calamari simmered in a rich tomato sauce with olives, capers, and aromatic herbs. Perfect for a quick yet impressive meal!


Ingredients

  • 1 lb fresh calamari, cleaned and sliced into rings
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup green olives, pitted and halved
  • 1/4 cup black olives, pitted and halved
  • 1 tbsp capers, rinsed
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

 

  • 1/4 cup dry white wine (optional)

Instructions

  1. Sauté the Aromatics – Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sautéing until fragrant.
  2. Simmer the Sauce – Pour in the crushed tomatoes and white wine (if using), stirring well. Simmer for 5 minutes.
  3. Add the Flavorful Ingredients – Stir in olives, capers, oregano, salt, and black pepper. Cook for another 5 minutes.
  4. Cook the Calamari – Add the calamari rings to the sauce, stirring gently. Cook for 2-3 minutes until the calamari is just tender.
  5. Garnish & Serve – Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

  • Be careful not to overcook the calamari, as it can become rubbery.
  • Serve over pasta, crusty bread, or alongside a fresh green salad.
  • For extra depth, add anchovies or a splash of balsamic vinegar to the sauce.
