Buffalo Chicken

  • 2 cups cooked chicken breasts, shredded (rotisserie chicken recommended)
  • 1/2 cup Franks Hot Sauce
  • 1/2 cup homemade ranch dressing (or store-bought)
  • 2 teaspoons minced garlic

Cheese Mixture

  • 4 oz cream cheese, softened
  • 4 tablespoons crumbled blue cheese
  • 1/2 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Prepare the Cheese Mixture: In a small bowl, combine the softened cream cheese, crumbled blue cheese, paprika, ground black pepper, and cayenne pepper (if using). Mash and stir the mixture together until completely blended. Set aside for spreading later.
  2. Make the Buffalo Chicken: In a separate bowl, mix the cooked, shredded chicken with hot sauce, ranch dressing, and minced garlic. Stir thoroughly until all the chicken is evenly coated with the buffalo sauce and dressing blend.
  3. Butter the Bread: Spread butter generously on one side of each bread slice. This will help you achieve that golden, crispy exterior when grilled.
  4. Assemble the Sandwiches: Flip each bread slice over so the unbuttered side is facing up. On four slices, spread an even amount of the prepared cheese mixture. Top the cheese mixture with about 1/2 cup of the buffalo chicken mixture per sandwich. On the remaining four slices, layer 1-2 slices of Muenster cheese each. Place the Muenster cheese–topped slices over the chicken to close the sandwiches, buttered sides facing out.
  5. Grill the Sandwiches: Heat a large skillet over low heat and lightly coat with cooking spray. Place sandwiches in the skillet (work in batches if needed). Cook for about 5 minutes per side, or until the bread is golden-brown and crispy and the cheeses have melted. Flip carefully halfway through for even browning.
