- 1 3/4 cup light brown sugar, packed
- 1 1/2 cups unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
For the Icing:
- 1 cup powdered sugar
- 2 1/2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
Make the Cookie Dough:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together cake flour, cornstarch, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add eggs and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Scoop 2-tablespoon-sized balls of dough onto the baking sheet, spacing them apart.
- Bake for 10-12 minutes, until lightly golden. Let cool.
Make the Icing:
- Whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle or spread over cooled cookies.
