For the Pork Chops:

  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and pepper (to taste)
  • 1 tbsp olive oil

For the Glaze:

  • 1/2 cup brown sugar
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1 clove garlic (minced)

Toppings:

  • 4 pineapple rings
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Sear the pork chops:
    • Season the pork chops with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side, until golden brown. Remove and set aside.
  3. Make the glaze:
    • In the same skillet, combine the brown sugar, pineapple juice, soy sauce, Worcestershire sauce, apple cider vinegar, and minced garlic. Stir and simmer for 3–4 minutes until slightly thickened.
  4. Assemble and bake:
    • Return the pork chops to the skillet, spoon the glaze over them, and top each chop with a pineapple ring. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  5. Garnish and serve:
    • Remove the pork chops from the oven and spoon additional glaze over the top. Garnish with fresh parsley if desired. Serve with your favorite sides.

Notes

  • Use boneless pork chops if preferred, but adjust the cooking time as they cook faster.
  • For extra caramelization, broil the pork chops for the last 2–3 minutes.
