Description

This Crunchy Broccoli Salad with Honey Dijon Vinaigrette is a light, refreshing dish packed with nutrients and bold flavors. Made with broccoli, purple cabbage, crispy bacon, and a creamy homemade vinaigrette, it’s perfect as a side dish or a main meal!


Ingredients

For the Salad:

  • 4 cups broccoli florets, finely chopped
  • 1 cup purple cabbage, finely chopped
  • 6 slices cooked bacon, finely chopped
  • 1/2 red onion, finely diced
  • 1/2 cup raw cashews, finely chopped
  • 1/2 cup Parmigiano Reggiano cheese, freshly grated

For the Honey Dijon Vinaigrette:

  • 1/2 cup olive oil
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, mashed
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

1. Make the Honey Dijon Vinaigrette:

  1. In a jar or bowl, combine olive oil, Dijon mustard, honey, apple cider vinegar, mashed garlic, salt, and black pepper.
  2. Whisk or shake the jar until the vinaigrette is creamy and well combined.
  3. Taste and adjust seasonings, if necessary.

2. Prepare the Salad Ingredients:

  1. Finely chop broccoli florets, purple cabbage, bacon, red onion, and cashews.
  2. Transfer the chopped ingredients to a large mixing bowl.

3. Assemble the Salad:

  1. Pour the Honey Dijon Vinaigrette over the salad ingredients.
  2. Toss well to coat everything evenly.
  3. Add freshly grated Parmigiano Reggiano cheese on top and toss again.

4. Serve:

  1. Serve immediately or refrigerate for up to 1 day to allow the flavors to meld.
