For the Salad:
- 4 cups broccoli florets, finely chopped
- 1 cup purple cabbage, finely chopped
- 6 slices cooked bacon, finely chopped
- 1/2 red onion, finely diced
- 1/2 cup raw cashews, finely chopped
- 1/2 cup Parmigiano Reggiano cheese, freshly grated
For the Honey Dijon Vinaigrette:
- 1/2 cup olive oil
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 2 cloves garlic, mashed
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
Instructions
1. Make the Honey Dijon Vinaigrette:
- In a jar or bowl, combine olive oil, Dijon mustard, honey, apple cider vinegar, mashed garlic, salt, and black pepper.
- Whisk or shake the jar until the vinaigrette is creamy and well combined.
- Taste and adjust seasonings, if necessary.
2. Prepare the Salad Ingredients:
- Finely chop broccoli florets, purple cabbage, bacon, red onion, and cashews.
- Transfer the chopped ingredients to a large mixing bowl.
3. Assemble the Salad:
- Pour the Honey Dijon Vinaigrette over the salad ingredients.
- Toss well to coat everything evenly.
- Add freshly grated Parmigiano Reggiano cheese on top and toss again.
4. Serve:
- Serve immediately or refrigerate for up to 1 day to allow the flavors to meld.
