Description

These Broccoli and Cheese Stuffed Chicken Breasts are a cheesy, low-carb dinner dream. Juicy chicken is filled with a creamy mix of broccoli, mozzarella, and cream cheese, then seared and baked to perfection. Easy, satisfying, and high in protein, it’s a go-to for family meals or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 1/2 cups chopped broccoli (steamed or blanched)

  • 3/4 cup shredded mozzarella cheese

  • 1/2 cup cream cheese, softened

  • 1/4 cup grated Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

 

  • Fresh parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

  2. In a bowl, combine broccoli, mozzarella, cream cheese, Parmesan, garlic powder, onion powder, and Italian seasoning. Season with salt and pepper.

  3. Carefully slice a pocket into the side of each chicken breast without cutting through.

  4. Stuff the broccoli cheese mixture into each chicken breast. Use toothpicks to secure if needed.

  5. Season the outside of the chicken with salt and pepper.

  6. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden.

  7. Transfer to the prepared baking dish and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).

  8. Let rest 5 minutes. Garnish with chopped parsley and serve.

Notes

  • Swap mozzarella for sharp cheddar for a richer flavor.

  • Add red pepper flakes for a kick of heat.

  • Can be prepped ahead and baked later for easy entertaining or meal prep.
