Description

A creamy cucumber and cream cheese spread, perfect for sandwiches, crackers, and Derby party appetizers. This refreshing, tangy dip is a Kentucky favorite, often enjoyed at Derby gatherings and afternoon teas.

Ingredients

Units Scale
  • 8 oz cream cheese, softened
  • 1/2 cup cucumber, grated and drained
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1 drop green food coloring (optional)
  • Fresh dill for garnish

Instructions

  1. In a mixing bowl, combine cream cheese, cucumber, mayonnaise, lemon juice, salt, and onion powder.
  2. Mix until smooth and creamy. If desired, add a drop of green food coloring for a classic look.
  3. Chill for 30 minutes before serving.
  4. Spread on crackers, sandwiches, or use as a dip for vegetables. Garnish with fresh dill.

Notes

  • To prevent excess moisture, squeeze grated cucumber with a paper towel before mixing.
  • For a stronger flavor, add a pinch of garlic powder or chopped fresh chives.
  • Serve with toasted baguette slices for an elegant touch.
