Ingredients
For the Beef Tips:

1 1/2 lbs sirloin tips, cut into 1-inch cubes

Beef Seasoning:

1 teaspoon brown sugar

1/4 teaspoon black pepper

1/2 teaspoon each: salt, garlic powder, onion powder, chili powder, paprika
For the Gravy:

1/4 cup dry red wine (optional, for deglazing)

2 tablespoons butter

1 small yellow onion, diced

3 cloves garlic, minced

2 cups beef broth

1 beef bouillon cube

1 1/2 teaspoons Worcestershire sauce

1/4 teaspoon each: dried thyme, dried rosemary

1 teaspoon onion powder

1/2 teaspoon garlic powder

3 tablespoons cornstarch + 1/4 cup cold water (for slurry)
Instructions

Mix all beef seasoning ingredients. Cut beef into 1-inch pieces and toss with seasoning. Then coat with flour.

Heat olive oil in a large skillet over medium-high heat. Brown beef tips in batches, 30–45 seconds per side. Transfer to a plate (do not fully cook).

Deglaze the skillet with red wine, scraping up browned bits. Let reduce by half.

Add butter and diced onion; sauté until soft (about 5 minutes). Stir in garlic and cook for 1 more minute.

Add beef broth, bouillon, Worcestershire, herbs, onion powder, and garlic powder. Bring to a boil.

Mix cornstarch and cold water to make a slurry. Slowly whisk into the gravy to thicken to your liking.

Return beef and its juices to the pan. Simmer partially covered over medium-low heat for 10–15 minutes until beef is tender and fully cooked.

Optional: Stir in 1 tablespoon cold butter at the end for a smooth finish (Monter au Beurre).
