Meat:
- 250 g beef (thinly sliced or ground)
Produce:
- 100 g bean sprouts
- 1/2 bell pepper (thinly sliced)
- 1 carrot (julienned)
- 1/2 onion (sliced)
- 3 spring onions (sliced, white and green parts separated)
- 1 tbsp garlic (minced)
Pasta & Grains:
- 300 g noodles (chow mein, egg noodles, or your choice)
Condiments:
- 3 tbsp oyster sauce
- 3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp cooking rice wine
Baking & Spices:
- 1/2 tsp black pepper
Oils & Vinegars:
- 1 tsp sesame oil
- 2 tbsp vegetable oil
Instructions
- Cook the Noodles:
- Boil the noodles according to package instructions. Drain and set aside. Drizzle with 1/2 tsp sesame oil to prevent sticking.
- Cook the Beef:
- Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry for 2–3 minutes, until browned. Remove from the skillet and set aside.
- Sauté the Vegetables:
- In the same skillet, add the remaining 1 tbsp vegetable oil. Stir-fry the garlic, onion, and white parts of the spring onions for 1 minute.
- Add the carrot, bell pepper, and bean sprouts. Stir-fry for 2–3 minutes until tender-crisp.
- Prepare the Sauce:
- In a small bowl, whisk together the oyster sauce, light soy sauce, dark soy sauce, rice wine, and black pepper.
- Combine Everything:
- Return the cooked beef to the skillet. Add the cooked noodles and pour the sauce over everything. Toss well to coat the noodles and ingredients evenly.
- Finish with Green Onions:
- Sprinkle the green parts of the spring onions on top and drizzle with the remaining 1/2 tsp sesame oil. Toss once more.
- Serve:
- Plate the chow mein and serve hot. Pair with your favorite side dishes like dumplings or a simple salad.
