Description

This Avocado, Mozzarella, and Tomato Grilled Cheese is a gourmet twist on a classic comfort food. Creamy mashed avocado, juicy cherry tomatoes, and melty fresh mozzarella come together between buttery golden sourdough slices. It’s the ultimate crispy, cheesy, vegetarian sandwich for a satisfying lunch or dinner.


Ingredients

  • 4 slices sourdough bread

  • 1 ripe avocado, mashed

  • 4 oz fresh mozzarella, sliced

  • 1/2 cup cherry tomatoes, halved

  • 1 tablespoon basil pesto (optional)

  • 2 tablespoons butter, softened

  • Salt and freshly cracked black pepper, to taste

 

  • Fresh basil leaves, for garnish


Instructions

  1. Preheat a skillet or griddle over medium heat.

  2. Spread softened butter on one side of each bread slice.

  3. On the unbuttered sides of two slices, spread mashed avocado.

  4. Layer with mozzarella, cherry tomatoes, a drizzle of pesto (if using), and season with salt and pepper.

  5. Top with the remaining bread slices, buttered side facing out.

  6. Grill sandwiches for 3–4 minutes per side, pressing lightly, until golden brown and the cheese is melted.

  7. Slice diagonally, garnish with fresh basil, and serve hot.

Notes

  • Add a fried egg or spinach for an extra flavor boost.

  • Swap sourdough for whole grain or ciabatta for a different texture.
