Ingredients

Units Scale
For the Döner Marinade:
  • 1 lb beef sirloin or lamb, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
For Assembly:

  • 4 pita or lavash breads
  • 1/2 cup tzatziki or garlic yogurt sauce
  • 1/2 red onion, thinly sliced
  • 1/2 cup chopped parsley
  • 1/2 teaspoon sumac
  • 1 large tomato, sliced
  • 1/4 cup pickles, sliced

Instructions

  • In a bowl, mix olive oil, yogurt, lemon juice, cumin, paprika, oregano, coriander, garlic powder, salt, black pepper, and cayenne.
  • Add beef slices and coat well. Cover and marinate for at least 1 hour (overnight for deeper flavor).
  • Heat a skillet over medium-high heat. Cook the marinated beef for 3-4 minutes per side until browned and slightly crispy.
  • In a separate bowl, toss red onion with parsley and sumac for extra flavor.
  • Warm pita or lavash on a dry pan for a few seconds on each side.
  • Spread tzatziki or garlic yogurt sauce on each pita.
  • Add cooked beef, sumac-onion mixture, sliced tomatoes, and pickles.

  • Fold and serve warm.

Notes

  • Marinate overnight for maximum flavor and tenderness.
  • Use lamb for a richer, more traditional taste.
  • Pair with a side of Turkish rice pilaf or a fresh Mediterranean salad.
