Description

For the Molokhia Soup:

  • 500g fresh or frozen molokhia (jute leaves), finely chopped
  • 1 liter chicken or beef broth
  • 2 tbsp olive oil or butter
  • 4 cloves garlic (minced)
  • 1 tbsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • Juice of 1 lemon (for serving)
  • 1 cooked chicken breast or beef pieces (optional)

Instructions

1️⃣ Prepare the Broth:

  • In a large pot, heat the chicken or beef broth and bring it to a gentle simmer.
  • If using, add the cooked chicken or beef pieces to the broth.

2️⃣ Sauté the Garlic & Spices:

  • In a separate pan, heat olive oil or butter over medium heat.
  • Add minced garlic and ground coriander, sautéing until fragrant and golden brown.

3️⃣ Cook the Molokhia:

  • Stir in the molokhia to the simmering broth, mixing well.
  • Cook for 5–10 minutes, ensuring it does not overcook, as overcooking can make it slimy.

4️⃣ Season & Serve:

  • Stir in salt, black pepper, and cumin, then remove from heat.
  • Serve hot with a squeeze of fresh lemon juice for added flavor.
  • Enjoy with fluffy white rice or warm pita bread for an authentic experience.

Notes

  • For extra richness, add a spoonful of ghee or clarified butter before serving.
  • If using frozen molokhia, thaw it slightly before adding it to the broth.
