For the Asian Sauce:
- 1/2 cup tamari or low-sodium soy sauce
- 2 tbsp brown sugar (add more to taste, up to 4 tbsp)
- 6 garlic cloves, minced
- 1/2 tsp ginger
- 2 tsp rice vinegar
For the Stir-Fry:
- 10 oz snow peas
- 4 tbsp olive oil
- 10 oz mushrooms, sliced thinly
- 1 lb beef, thinly sliced (sirloin steak strips, flank steak, or other steak)
Instructions
1. Prepare the Sauce:
- In a small bowl, whisk together tamari, brown sugar, garlic, ginger, and rice vinegar. Set aside.
2. Cook the Snow Peas:
- Bring a medium pot of water to a boil. Add snow peas and cook for 5 minutes. Drain and set aside.
3. Sauté the Mushrooms:
- Heat a large skillet over high heat. Add 2 tbsp olive oil and let it sizzle.
- Add mushrooms and cook, stirring occasionally, until browned. Lightly salt halfway through. Transfer mushrooms to a bowl.
4. Sear the Beef:
- Using the same skillet, heat 2 tbsp olive oil over high heat.
- Add half of the sliced beef in a single layer, ensuring slices are not overcrowded.
- Sear beef until browned on one side, then flip and brown the other side. Remove to a bowl and repeat with the remaining beef.
5. Combine and Finish:
- Return all seared beef to the skillet. Add cooked snow peas, mushrooms, and prepared Asian sauce.
- Stir over high heat for 1 minute until everything is well coated and heated through.
- Cover the skillet with a lid and let it rest for 2-3 minutes off the heat.
