Description
Amazingly Easy Irish Soda Bread is a no-yeast quick bread with a soft, tender crumb and golden crust, lightly sweetened and filled with raisins or currants. This classic American-Irish bread is perfect for St. Patrick’s Day, cozy brunches, or enjoying with butter and jam.
Ingredients

4 cups all-purpose flour

1/4 cup granulated sugar

1 tsp baking soda

1 tbsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, cold and cubed

1 cup raisins or currants

1 1/4 cups buttermilk

1 large egg
Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.

Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Stir in raisins or currants.

In a separate bowl, whisk together buttermilk and egg. Add to the flour mixture and stir until a soft dough forms.

Turn the dough onto a lightly floured surface and gently shape into a round loaf.

Transfer to the prepared baking sheet and cut a shallow “X” on top of the loaf.

Bake for 40–45 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.

Let cool on a wire rack before slicing and serving.
Notes

For extra sweetness, sprinkle a little sugar on top before baking.
