Description

A flavorful and juicy roasted turkey coated in a rich, spicy Cajun butter rub, roasted to perfection with aromatic vegetables. This bold and delicious holiday centerpiece is sure to impress!


Ingredients

  • 1 whole turkey (1214 lbs), thawed
  • 1 cup unsalted butter, softened
  • 3 tbsp Cajun seasoning
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tsp cayenne pepper (optional for extra spice)
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 tbsp chopped fresh parsley
  • 2 cups chicken broth
  • 1 onion, quartered
  • 2 carrots, chopped

 

  • 2 celery stalks, chopped

Instructions

  1. Preheat & Prep the Turkey – Preheat oven to 325°F (163°C). Pat the turkey dry with paper towels.
  2. Make the Cajun Butter – In a bowl, mix softened butter with Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, cayenne, salt, black pepper, lemon juice, garlic, and parsley.
  3. Butter the Turkey – Loosen the turkey skin by gently sliding your fingers under the breast and legs. Spread half of the Cajun butter under the skin and rub the remaining butter all over the turkey.
  4. Stuff the Cavity – Fill the turkey cavity with quartered onion, some chopped carrots, and celery.
  5. Prepare for Roasting – Place the turkey on a roasting rack inside a large roasting pan. Scatter the remaining vegetables around the turkey and pour chicken broth into the pan.
  6. Roast & Baste – Roast uncovered for 3 to 3.5 hours, basting every 30 minutes with the pan juices.
  7. Check for Doneness – Use a thermometer to check the thickest part of the thigh. It should read 165°F (74°C).
  8. Rest & Serve – Let the turkey rest for 20-30 minutes before carving. Serve with roasted vegetables and pan juices as a rich, flavorful gravy.

Notes

  • For extra crispiness, roast at 425°F for the last 15-20 minutes.
  • Use leftover drippings to make an incredible Cajun turkey gravy.
  • If using a frozen turkey, thaw it in the fridge for 3-4 days before cooking.
