For the Soup:
- 1 lb ground beef (or Italian sausage)
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
For the Creamy Finish:
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
For Garnish:
- 1/2 cup ricotta cheese
- Fresh basil or parsley, chopped
Instructions
- Cook the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat if needed.
- Sauté Aromatics: Add the diced onion and minced garlic, cooking until soft and fragrant (about 2 minutes).
- Build the Broth: Pour in the crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, salt, black pepper, and red pepper flakes. Stir well and bring to a simmer.
- Cook the Noodles: Add the broken lasagna noodles directly into the soup. Let simmer for 10-12 minutes, stirring occasionally, until the noodles are tender.
- Make It Creamy: Reduce the heat and stir in the heavy cream, mozzarella, and Parmesan cheese until melted and smooth.
- Serve & Garnish: Ladle the soup into bowls, top with a spoonful of ricotta cheese, and sprinkle with fresh basil or parsley. Enjoy your Lasagna With Ricotta in a whole new way!
Notes
- Swap ground beef for Italian sausage for extra flavor.
- Use gluten-free lasagna noodles if needed.
- Make it spicier by adding extra red pepper flakes.
- For a thicker texture, reduce the broth slightly.
