Ingredients
For the Base:
- 2 cups diced potatoes (or frozen hash browns)

For the Toppings:
- 4 large eggs, scrambled
- 1/2 lb breakfast sausage or 4 slices of bacon, cooked & crumbled
- 1/2 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup diced bell peppers (optional)
- 1/4 cup diced onions (optional)
- 2 tbsp chopped green onions or parsley (for garnish)
