Description

This 30-Minute Ground Beef Stroganoff is a creamy, comforting, budget-friendly classic that comes together in just half an hour. Made with tender egg noodles, ground beef, and a rich sour cream sauce, it’s the perfect quick and easy weeknight dinner!

Ingredients

  • 6 ounces egg noodles

  • 1 pound ground beef

  • 1/4 cup butter

  • 1/4 cup flour

  • 1 cup beef broth

  • 1 1/4 cups milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1/4 cup sour cream

Instructions

  1. Bring a pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside.

  2. In a large skillet over medium heat, cook ground beef until fully browned, about 6–8 minutes. Drain excess fat and transfer the beef to a plate.

  3. In the same skillet, melt butter. Add flour and whisk constantly for 2 minutes to make a roux.

  4. Slowly add beef broth while whisking to avoid lumps. Cook until thickened, about 3–4 minutes.

  5. Gradually whisk in milk and continue to stir over medium heat until the sauce thickens, about 5–7 minutes.

  6. Stir in garlic powder, onion powder, salt, and pepper.

  7. Reduce heat to low and return the beef and noodles to the skillet. Stir until well combined and heated through.

  8. Add sour cream and mix gently until incorporated. Serve hot.

Notes

  • Use wide egg noodles or any pasta you have on hand, but don’t exceed 6 oz or the sauce may be too thin.

  • Double the recipe for meal prep or leftovers—it reheats beautifully.

  • Serve with green beans, salad, or garlic bread for a complete meal.
